Os óleos usados na fritura sofrem alterações rápidas e muito complexas devido às altas temperaturas a que são sujeitos. Estas alterações podem ter consequências quer a nível nutricional quer a nível da saúde humana. Para a fritura os óleos mais adequados são o azeite e óleo de amendoim. A fritura corresponde a um dos mais antigos processos culinários e consiste basicamente na imersão de peças de alimentos em óleo quente, sendo este absorvido pelos alimentos substituindo alguma da água perdida. A acrilamida é formada nas batatas durante a fritura e está extremamente relacionada com a cor da batata. São finas fatias desidratadas, com um conteúdo em óleo que varia entre os 35 e os 45%, o que concebe ao produto uma textura única e uma combinação de sabor/flavour que as torna tão desejadas. A desidratação em óleo a quente ocorre a temperaturas entre 160-180ºC. O desenvolvimento da cor só começa quando ocorre uma suficiente secagem das fatias de batata. Esta também depende da taxa de secagem e do coeficiente de transferência de calor durante os diferentes estádios da fritura.&lt;br /&gt;&lt;br /&gt;A cor é visualmente considerada um dos mais importantes parâmetros na verificação da qualidade das batatas fritas e é o resultado da reacção de Maillard. Uma pequena parte deste amido da batata é resistente à digestão. Considera-se que a acção deste se assemelhe à da fibra, melhorando a tolerância à glicose e a sensibilidade à insulina, diminuindo o colesterol plasmático e a concentração de triacilgliceróis e aumentando a saciedade (Cummings et al. 1996; Hylla et al 1998; Raban et al. 1994). As batatas contêm quantidades significativas de vitaminas como a C e a B6e minerais como o potássio. Esses indivíduos devem optar por uma dieta com baixo teor em sal uma vez que são mais susceptíveis à elevação da pressão.
